Faculty Retreat Local Foods Luncheon
Dining Services catered a Local Foods Luncheon for the second consecutive year at the annual Faculty Retreat. The event took place in Great Hall and was deemed a great success by the diners. Food was sourced from over a dozen local farms and producers all of which are detailed (along with the menu) on the placemat for the event.
Executive Chef Jim Morris and General Manger Joe Winegardner created an amazing display of local vegetables in the shape of the state of Minnesota. We're not sure whose idea it was, but the result was colorfully stunning.
